
Crispy Baked Tacos
These tacos are packed with flavor and nutrition. If you want healthier tacos, this is the recipe for you. It has a great balance of carbohydate, protein, fiber and fat. The best part is this recipe is customizable. You can use any protein (chicken, fish, shrimp) or make it into a taco bowl. Do what works for you and enjoy this healthy recipe
Ingredients
- 1 lb Grass-fed lean ground beef
- 3 Bell Peppers
- 1 Red Onion
- 1 packet Taco Seasoning
- Tortillas (I like almond flour from siete) sub corn tortillas if you need
- 1 jar Salsa
- 1 Bunch Chopped Cilantro
- 1 Avocado
- 1 Lime
- Queso Fresco optional
Instructions
- Preheat oven to 400 degrees
- Chop bell peppers and onions into thin slices and set aside
- Heat pan with 1-2tbsp of avocado oil and cook peppers and onions until slightly wilted
- Remove peppers and onions from pan and set aside
- Add ground beef to pan with seasonings, cook through
- Once beef is cooked though, add back in peppers and mix together
- Add half of a jar of your favorite salsa to the pan and let simmer for 5 minutes
- Place open tortillas on baking sheet, then add taco fillings to each one, fold over and place in oven for 5-7 minutes (until tortilla is crispy)
- Top with avocado, fresh cilantro and lime squeeze
- Enjoy!
