"Healthier Pasta Salad"

This recipe is perfect for using up all of the veggies in the fridge before they go bad. You can make this super nutrient dense by adding all of the veggies and herbs to this dish. It is NOT like a traditional pasta salad that is heavy in mayo and thick. It is more of a light summer dish you can customize by adding salmon, chicken or tuna if you want!

  • 1 box Brown rice pasta I love Jovial Brand or Trader Joe's brown rice pasta! It is (GF)
  • Chopped cucumbers
  • Chopped tomatoes
  • Chopped baby spinach
  • Fresh Dill
  • Protein (optional) here I used honey mustard salmon
  • Feta cheese optional
  • Olives Optional


  • Extra Virgin Olive Oil
  • Fresh Lemon Juice
  • Dijon Mustard
  • Maple Syrup or Honey
  • Balsamic or Red wine vinegar
  • dried oregano, dill, parsley optional hot chili flakes


  • Boil the noodles in salted water until cooked
  • Drain noodles and allow to cool in the fridge
  • Add veggies and dressing in a large bowl to mix it all up
  • Top with fresh lemon, dill and sea salt. Enjoy!
