Instead of a standard wrap, we've nestled this delicious filling in a homemade ciabatta bun. This light and airy bread, made with your own hands, adds a touch of artisan flair and a delightful textural contrast to the creamy eggs and crispy bacon. But this step is only because I was feeling extra, you can totally go for an easier bread base, like sourdough, whole grain bread or store bought ciabatta.

This recipe isn't just about taste, it's about nourishment. We've packed it with protein from the eggs and bacon, fiber from the fresh spinach which contains essential vitamins.

This recipe is for a next-level breakfast sandwich inspired by the best of Starbucks' offerings. It takes the savory goodness of the Bacon Gouda and the protein punch of the Spinach Feta Egg White Wrap but gives them a healthy and homemade makeover.

Equipment

  • 1 Mixing Bowl
  • 1 Non Stick Pan
  • 1 Rubber Spatula
  • Parchment Paper
  • Aluminum Foil

Ingredients
  

  • 2 Ciabatta Buns I made homemade ciabatta, you can use store bought or sub for a whole grain bread or local sourdough
  • 6 Pasture Raised Eggs
  • 4 Slices Lean No Sugar Added Bacon
  • 1 c Spinach Can use any mixed greens
  • Sprinkle Sheep's Milk Fresh Feta Cheese
  • Hot Sauce I used crystal brand, optional

Instructions
 

  • Heat pan to medium high heat
  • Place the bacon on cold pan and let the bacon cook as it heats up. This will prevent the bacon from shrinking, keeping it nice and flat for building your sandwich
  • Cook the bacon on each side for about 3 minutes or until crispy
  • Remove bacon from pan, set aside on a plate with paper towels to absorb excess grease
  • Crack eggs into a bowl, whisk together and add in salt and pepper.
  • Pour eggs in the pan with remaining bacon grease and soft scramble until done
  • Remove eggs from the pan and begin assembling sandwich
  • Add bacon, eggs, spinach, sprinkle of feta and hot sauce to the ciabatta bread
  • Option to add avocado here, best if serving fresh.
  • Wrap assembled sandwich in parchment paper
  • Wrap again in foil
  • Cut down the middle and serve!

Notes

If you choose to make homemade ciabatta, I followed this easy 3 hour recipe. 
Customization Tips:
    • Don't have homemade ciabatta? No problem! Use a high-quality store-bought whole wheat wrap or whole wheat bread. Toast it lightly for added texture.
    • Not a fan of bacon? Experiment with turkey bacon, tempeh, or even crumbled sausage for a protein twist.
    • Want to add more veggies? Sauteed peppers, onions, or mushrooms would be delicious additions to the filling.
    • Feeling adventurous? Try different cheeses like swiss, gouda or cheddar instead of feta.
    • Craving a touch of sweetness? A drizzle of hot honey would go nicely on this
    • Need a spread to add? Try mashed avocado with everything bagel seasoning, (Note: if making these for meal prep, avocado will turn brown, best if served fresh)
