Healthy Fried Rice

Let's make fried rice healthy and still keep that delicious flavor. This recipe calls for ingredients you likely already have in your fridge and it is a super easy way to use leftover veggies. The best part is - It's balanced and customizable

Ingredients
  

  • 1/2 c Leftover Rice (Brown or White) Cold leftover rice works best
  • 1 tsp Soy sauce sub coconut aminos or tamari for GF
  • 1/2 c leftover veggies (mushrooms, peppers, broccoli, zucchini)
  • 1 egg

Instructions
 

  • Heat up wok or other stir fry pan
  • Add in 2 tsp avocado oil
  • Throw in leftover rice + veggies
  • Push veggies and rice to the side, make a space to scramble the egg then mix all together
  • Add soy sauce, sriracha, sesame seeds and fresh lime!

Notes

Ways To Customize:
Lower Carb - Use frozen or fresh cauliflower rice
More protein - Add another egg or meat 
More fiber - Add more veggies / greens
More flavor - add sriracha + lime and toasted sesame oil
