
Herb Roasted Potatoes
Simple side dish to any meal with tons of flavor. Great way to incorporate carbohydrates from whole foods (simply potatoes!)
Instructions
- Preheat oven to 400
- Chop up gold potatoes into even pieces
- Microwave potatoes for 5 minutes (to speed up process, optional)
- Throw potatoes into a cast iron pan or baking sheet lined with parchment paper
- Drizzle fresh lemon juice + salt and pepper
- Roast for 20 minutes (longer if you skipped step 3)
- Add in fresh rosemary at the very end to prevent burning!
Notes
Adding lemon juice onto the potatoes when they are raw really helps absorb the flavor into them, these are my favorite crispy side dish for any meal!
