Jerk Chicken Bowls

This jerk chicken bowl has the perfect balance of carbohydrates, protein, fat and fiber. It tastes tropical and is the perfect way to switch up the dinner routine with new flavors.


  • 1 lb Chicken Thighs
  • 4 tbsp Jerk Seasoning
  • 1 c Jasmine Rice can use any rice
  • 1.5 c Coconut Milk
  • 1 Mango
  • 1 Lime


  • Rinse rice until water runs clear then bring 1c of rice with 1.5c coconut milk to a boil, then cover with lid and let simmer until cooked through
  • While rice is cooking start to season chicken thighs with jerk seasoning
  • Grill or cook chicken in avocado oil until done
  • Dice mango
  • Squeeze fresh lime over chicken
  • Assemble bowl over greens, next add coconut rice, jerk chicken and diced mango!
  • Enjoy!
