Salmon & Veggie Power Bowl

(Any type of fish can be used, wild salmon, cod, halibut)
- 1/3 lb Wild Caught Salmon
- 1/2 c Organic Wild Rice
- 1/2 c Organic Raw Baby Spinach
- 1/2 Roasted Zucchini
- 1 Roasted Carrot
- 1 Cara Cara Orange
- Sprinkle of Feta Cheese (Optional)
Boil 1 cup of water and 1/2c wild rice with 1tsp oil, bring to a boil, then cover and reduce heat to low and let it cook for around 45 minutes, without touching the lid!
Heat oven to 415 and toss veggies in a small amount of extra virgin olive oil, or avocado oil season with pink salt + ground pepper + turmeric. Cook veggies for 15 minutes, then place salmon onto a baking sheet and bake for 10 more minutes, and broil for 2.
