Sesame Salmon Bowls

Ingredients
  

  • 1 lb Wild Salmon
  • 1 Cucumber
  • 1 c Sushi Rice
  • 1/4 c Soy Sauce
  • 2 tbsp Sriracha
  • 1 tbsp Garlic Powder or Fresh Garlic
  • 1 tbsp Rice Vinegar
  • 1/4 c Sesame Oil
  • Sesame Seeds

Instructions
 

  • Cut salmon with skin on into cubes, place in a large mixing bowl
  • Combine soy sauce, half of the sesame oil and sriracha and marinate for at least 30 minutes
  • Cook sushi rice according to package directions
  • Shave cucumber into thin slices and place in a separate bowl
  • Mix shaved cucumber with rice vinegar and 1 tbsp of sesame oil
  • Cook salmon ~ 3 minutes each side depending on thickness
  • Assemble the bowl with rice, cooked salmon, cucumbers and top with sesame seeds!
