Sourdough Grilled Chicken Sandwich

This sourdough grilled chicken sandwich was inspired by a trip to the farmer's market. When you have a good loaf of bread, this is the first thing I create. It has a great balance of nutrition, flavor and texture. This recipe can be made vegetarian as well. Customize it how you like, and enjoy!

Ingredients
  

  • 2 slices Sourdough Bread
  • 1/2 Bell Pepper
  • 1 handful Organic Spinach
  • 1 tbsp Red Pepper Hummus
  • 1/2 Thin Sliced Organic Chicken Breast
  • 2 tbsp Seasoning Blend (paprika, garlic salt, pepper, onion powder, dash of cayenne pepper)

Instructions
 

  • Heat up skillet to medium high heat
  • Rub seasoning mixture into the chicken, coat evenly.
  • Spray pan with oil and cook chicken breast on both sides until cooked through, about 6 minutes each side depending on thickness.
  • Keep pan at medium-high heat and saute pepper in oil until blackened for about 4 minutes on each side without touching.
  • Add hummus to toasted bread and fill in the sandwich, cut in half and enjoy!

Notes

Tips:
  • For added flavor, you can drizzle the sandwich with balsamic vinegar or pesto.
  • You can also add other vegetables to the sandwich, such as sliced onions, tomatoes, or cucumbers.
  • If you don't have a grill, you can cook the chicken in a pan over medium heat.
  • This recipe is easily doubled or tripled to feed a crowd.
  • Variations:
    • Mediterranean: Add crumbled feta cheese, olives, and sun-dried tomatoes.
    • Spicy: Add a pinch of red pepper flakes to the hummus or sprinkle with hot sauce.
    • Vegetarian: Replace the chicken with grilled tofu or portobello mushrooms.
