
Spicy Shrimp Fajita Bowls
This bowl is packed with tons of flavor and nutrition. Perfect to add to your dinner rotation and extras make great meal prep. This meal has a great balance of carbohydrate, protein, fat and fiber to keep you full and energized.
Ingredients
- 1 lb Raw shrimp peeled and deveined
- 3 tbsp Spice mixture (spanish hot paprika, garlic, onion, chili powder, sea salt, pepper, oregano)
- 3 tbsp Avocado Oil
- 1 c Cooked Rice brown or white
- 3 Bell Peppers
- 1 Yellow Onion
- 1 head Chopped romaine lettuce
- 1 Avocado
Instructions
- Preheat cast iron skillet to medium high heat
- Combine seasonings and oil with raw shrimp
- Slice onion and bell peppers and set aside
- Sauté bell peppers and onions 4-5 minutes, then remove from pan.
- Place seasoned shrimp in the pan and cook for 2 minutes on each side until cooked through
- Add peppers and onions back into the skillet
- Serve over white rice, top with shrimp and pepper & onion mixture with lettuce and avocado
